gekochter Kuhkopf/Cowhead/ Skopo and a good bye to my neighbours

 

Heute bin ich mit dem Taxi , das ist ein Kleinbus und meinem Nachbarn zur Innenstadt von Johannesburg gefahren und habe einen Kuhkopf beim Metzger gekauft, den dann auf einen Markt  einhäuten lassen und zusammen mit Karabo später das Fleisch zerteilt , bei den Nachbarn einen Topf geliehen, eine Kochstelle draußen aufgebaut und 2 Töpfe in meiner Wohnung.

Nach einigen Stunden war das Gericht fertig und dann habe ich meine Nachbarn eingeladen um mitzuessen und um mich zu verabschieden.

Jeder der sich schüttelt, dem kann ich nur sagen es war eine Delikatesse. Normalerweise isst man das mit Pap was ein  Südafrikanischer Maismehlbrei ist. Nur haben wir es beim Fleisch belassen und jeder hat sich drauf gestürzt :-)

Das ist die Geschichte zum Kuhkopf hier Skopo genannt: (am Rande früher durfte das Gericht nur Männer essen)!

Wenn in vielen Ländern Kühe zur Fleischgewinnung getötet werden, landen die Köpfe im Abfall. Das liegt daran, dass viele Menschen nicht glauben, dass das Fleisch von einem Kuhkopf gegessen werden sollte. Aber in Südafrika gibt es Menschen, die ein starkes Verlangen nach Kuhkopffleisch haben. Viele Menschen in Johannesburg verkaufen und essen es. In Südafrika wird das Fleisch "skop" genannt. Die Männer, die es essen, sagen, es sei billiger als andere Fleischsorten und schmackhafter.

Einige Fleischverkäufer in Johannesburg haben kürzlich gelernt, wie sie Kuhköpfe für ihre Kunden zubereiten können. Sie entfernen die Haut vom Kopf. Dann trennen sie mit einer Axt das Fleisch von den Knochen. "Dieses Fleisch ist köstlich, es ist zart und es ist ein sehr, sehr gutes Fleisch .Selbst in den alten Zeiten, als unsere Großväter eine Kuh schlachteten, war der Kuhkopf nur für Männer bestimmt."Ein Großteil des Skop-Fleischs wird an Verkäufer verkauft, die auf der Straße Essen anbieten. 

Aus Sorge vor dem Rinderwahnsinn, bei dem das Gehirn abstirbt, essen nur wenige Menschen in westlichen Ländern Rinderhirn oder Organe wie Lebern oder Nieren. Die südafrikanische Regierung erklärt jedoch, dass der Rinderwahnsinn bei Kühen in ihrem Land noch nie festgestellt wurde.

Viele Männer in Südafrika sind der Meinung, dass Skop-Fleisch nicht nur gut schmeckt, sondern auch ihr sexuelles Verlangen fördert. Und sie sagen, dass dies am stärksten in der Kuhkopfsuppe der Fall ist, die sie nach dem Verzehr von Skop essen.

Zum nachkochen :-)) das Rezept

Skopo (Inyama yenhloko)

Man schneidet das Fleisch in grobe Stücke und kocht alles zusammen mit Salz , Pfeffer, Kräuter für ungefähr 2 Stunden bis es weich ist. Wundert Euch nicht, denn es wird wirklich alles verwendet. Bei unserem Kopf fehlte die Zunge, denn die wird getrennte teuer verkauft und das Hirn war nicht mehr dabei 🙈

Mielie Pap (Masmehl)

Wasser kochen und Salz hinzugeben. Das Maismehl einrieseln lassen. Die Hitze reduzieren und den Brei etwas köcheln lassen, danach umrühren. Dann die Hitze reduzieren und bei geschlossenem Deckel 30 Minuten weiterziehen lassen. Gelegentlich umrühren. Der Pap sollte zum Schluss eine feste bis krümelige Konsistenz haben, sodass man ihn gut mit den Fingern essen kann.

Today I went by taxi, which is a minibus, and my neighbour to the city centre of Johannesburg and bought a cow's head from the butcher, had it skinned at a market and later cut up the meat together with Karabo, leased a pot from the neighbours, set up a stove outside and 2 pots in my flat.

After a few hours the dish was ready and then I invited my neighbours to join us for dinner and to say goodbye.

To anyone who is shaking, I can only say it was a delicacy. Normally you eat it with pap, which is a South African porridge. But we just served the meat and everyone jumped on it :-)

This is the story of the cow's head here called Skopo: (as an aside, in the past only men were allowed to eat the dish)!

When cows are killed for meat in many countries, the heads end up in the waste. This is because many people do not believe that the meat from a cow's head should be eaten. But in South Africa there are people who have a strong craving for cow head meat. Many people in Johannesburg sell and eat it. In South Africa, the meat is called "skop". The men who eat it say it is cheaper than other meats and tastier.

Some meat sellers in Johannesburg have recently learned how to prepare cow heads for their customers. They remove the skin from the head. Then they use an axe to separate the meat from the bones. "This meat is delicious, it's tender and it's a very, very good meat .Even in the old days when our grandfathers slaughtered a cow, the cow head was only for men. "Much of the skop meat is sold to vendors who offer food on the street. 

Few people in Western countries eat cattle brains or organs such as livers or kidneys out of concern about mad cow disease, in which the brain dies. However, the South African government states that mad cow disease has never been found in cows in their country.

Many men in South Africa believe that skop meat not only tastes good, but also boosts their sexual desire. And they say this is strongest in the cow head soup they eat after eating skop.

Skopo (Inyama yenhloko)

You cut the meat into rough pieces and cook everything together with salt , pepper, herbs for about 2 hours until it is soft. Don't be surprised, because everything is used. The tongue was missing from our head, because it is sold separately at a high price and the brain was no longer there 🙈

Mielie Pap 

Boil water and add salt. Sift in the maize flour. Reduce the heat and let the porridge simmer for a while, then stir. Then reduce the heat and let it simmer for 30 minutes with the lid closed. Stir occasionally. The pap should have a firm to crumbly consistency at the end so that you can eat it easily with your fingers.
